Nestled in the verdant hills, close to Todi, is the olive oil estate of El Mansur di Boetti.   El Mansur extra virgin olive oil is without doubt a superior olive oil.  The estate’s olives  are picked by hand between 10th and 30th October maximum, just before they reach maturity therefore providing the optimum quality extra virgin olive oil and as a consequence there are no micro-organisms affecting the quality as is the case when olives are left to fully mature.   The olives are pressed within 3 days.
